I recently had the opportunity to capture Food Photography at The Grand Hyatt with the talented Executive Chef Nadine Waechter Moreno. Hailing from Lucerne Switzerland with a belt of experience from around the world. I am truly one happy Food Photographer at The Grand Hyatt and feel lucky to have the opportunity to talk to and work with such an amazing Chef.
For Chef Nadine cooking was always a huge part of her life that she shared with her grandmother. Those times where special childhood memories that she feels lucky to have.
Leaving her home country 13 years ago Chef Nadine worked all over the world before she landed in Mexico. She has lived here now for nearly two years her husband who is a national of Mexico. They live and love the Playa Del Carmen lifestyle. The food, the people, the beaches and everything else in between. For five years her and her family lived in Tokyo Japan. Giving her the flare to cook (and eat) Asian food. The food she misses the most from that time in her life. The demand on a Chef leaves her with not much free time outside of her work kitchen. But when she is at home she cooks Asian food for her daughter and husband. She likes to spend as much time as possible with her family which can be somewhat challenging with a job in the hospitality industry.
One of the specialty dishes she created at the Grand Hyatt. It’s sure to please any meat lover out there.
Every dish created is prepared from scratch. Such as all the breads and sauces.
“We put a lot of effort in sourcing the freshest and best local product which I think makes the difference (in our restaurants).” says Chef Nadine. The menu at The Grill at 1 26, La Cocina and El Paseo surely stand out among the many restaurants in Playa Del Carmen.

The lunch menu has traditional tastes of Mexico.
And one of the best burgers around.
Drinks are deliciously hand crafted.
And the desserts are culinary delights.
